
Today is a very festive day for old and new cooks every where. Its all about cooking something with a Lil' kick. I love diving into a recipe that calls for extreme and vibrant flavors. In light of the holiday i thought i would share my special Ethiopian recipe with you all. Awaze Tibs is sauteed chunks or strips of Chicken, Lamb or Beef. The meat is usually marinated in Ethiopian marinate sauces that contain rosemary, tomatoes, green jalapenos and lemon juice."Special tibs" may be prepared with wine, tomatoes, or other ingredients. Normally, tibs of any kind is accompanied by the hot-red-pepper paste known as awazé. This sauce is to die for , the dish is incomplete without it. Here’s my secret recipe for those of you who want to spice up your kitchen. I will also tag some of the unfamiliar ingredients included in the recipe for your convenience.
Awaze Tibs:

- · 1 lb beef, boneless cut into ½ inch cubes
- · 1 red onion, chopped
- · 1 jalapeno pepper, chopped
- · 1 fresh tomato, chopped
- · 1 shot Ethiopian honey wine
- · 1 tablespoon ETETE Spices
- · 1 tablespoon Ethiopian butter
- · 1 garlic clove, crushed
- · 1 ginger, crushed
- · 1 cardamom pod, crushed (KORERIMA)
- · 2 tablespoon AWAZE ( berbere paste)
- · Cooking time: about 15 minutes

- · In a medium mixing bowl, mix the ETETE Spices and the beef.
- · In a pan over low heat, add the butter and wait until it melts.
- · Add the chopped tomato, the chopped onion and the beef to the butter, mix well and sauté for about 10 minutes
- · Add the chopped garlic and ginger, stir for about 2 minutes
- · Add the Ethiopian honey wine; mix it well
- · Add the Awaze( berbere paste); stir for about 1 minute
- · Add ½ teaspoon cardomom and the chopped jalapeño peppers; mix well
- · Serve on a plate with injera
